The Fillmore's food offerings are very minimal. If you make it before the show, places like Slice Works closes at 11 and Chiba Hut at midnight, and after a late show Tom's Diner is very close and one of the better 24 diners in town.
I can say with certainty, after a pretty wild Run The Jewels show I was so exhausted and hungry. As Jordan above me said, there are definitely restaurant options around. We went to Tom's Diner and it was exactly what we needed after that show. We were fairly tipsy so I can't be too responsible for that recommendation.. but we weren't too drunk to realize better food is found elsewhere.
Filmore has a crappy snack bar type food concession but that is it. No food trucks either. Plenty of good food in that area so plan ahead and eat first. Gyro place across the street is decent too.
Slice Works is a solid pizza place just across the street and they are typically open after Fillmore shows. Not many food trucks around that area, but there are definitely some late night diners and cafes within walking distance.
