I don't think they regularly do this, although you may be able to call and work something out if you have some fish you need gutted. They typically provide the fish (and other seafood) and sell it either raw, fried, or smoked.
Not sure about the fish, because it's a smoke house. But they do cook oysters and shrimps, plus a few other things.
