I have around 2300 square feet to move with no appliances to move, but a heavy ping pong table and probably lots of boxes. How many 16 foot trucks do you think I'll need?

If you have furniture, couches chairs beds etc you will probably need 3. If most is stackable stuff the ceilings are 8ft high and can hold a lot. I would recommend getting 2 16s early and then see where you're at and whether another 16 is needed or 2 or just a 7ft.
