Mostly you can do it yourself and one of the waiters/waitresses will periodically stop by to refill things/cut up meat for you and cook for you if you are inexperienced.

They cook your meat at the table top grill unless they are extremely busy. Then you would need to pay attention to make sure the meats don't get overcooked
