Honestly guys explaining blue cheese to someone who doesn't recognize it for what it is overbearing. Simply put, blue cheese looks that way. Salad and go uses food at a rate that it is never in store long enough to "spoil".

That's blue mold from blue cheese, it is safe to eat.

Blue cheese have had cultures of the mold Penicillium added so that the final product is spotted or veined throughout with blue or blue-grey mold and carries a distinct smell, either from that or various specially cultivated bacteria.
