Overflow sessions have been added on occasion (as needed) since the Salt Lake Temple closure announcement. These times are not published and I wouldn't count on anything that's not on the formal schedule - but they are trying valiantly to adjust to the increase in patrons. It's awesome! It's VERY busy so give yourself plenty of time and plan on extra time to sit and reflect while you wait...

One of the Provo, Utah temples is open on a monday..but generally you can find an availability Tues thru Sat with any temple in the world. Each temple has a website, check for exact schedules. :D
They usually open at 6am and close at 6pm, though hours can change. They are never open on Sunday or Monday
I know that it opens pretty early like 9:00 and close about 5ish.
At the moment I don't know they probably have session hours posted somewhere
