I don't know their recipe, but their boiled crawfish and crabs are reliably as good as or better than mine. And mine ate great. Here is a clue: my preference in boils is the product should first say hey I'm very fresh and delicious, meaning lots of lemon or other citrus, then I want salt, and finally comes the complexity of myriad seasonings from bay leaves garlic and sundry ither possibilities followed-FOLLOWED - at the end by a back of the roof of the mouth kick of cayenne (modest, not killing). No lip burn anywhere and plenty, plenty of flavor! Mostly I like the Belle River crawfish which they usually have. So, that's just me.
