it totally depends on when you take it in and what you want. During shotgun season there are a lot of deer brought in and it's on a first come first serve basis. They make sure you get your meat back, so they kind of move one at a time through processing. I'm lucky. I usually get my deer in before the mad rush of shotgun. Also, it depends on what you want. I get a lot of salami and sticks (180 pounds of sticks, and 140 pounds of salami this year) Those need smoking and take longer than just butchering. Plus if they skin and cap, that can add a day. You should usually get your meat back in about a week. I got this year's back in 3 days, trying to bet the rush.
