Central Park is very safe. That said, it is very secluded at night, and it is never safe to walk anywhere in NYC alone at night when there are no other pedestrians about.
Daytime, sure. I'd be cautious at night.
It depends on how well you can defend yourself. There is a chance that someone can attack you during the nighttime.
