Yes your own coolers are welcome.
Depends on the captain. The cooler will not be a problem, unless it's a little boat and there's no room. Most have an onboard cooler with ice that you can use anyways. As far as the other stuff goes, generally charters don't allow glass bottles, liquor or bananas. 🤣. Really just call ahead so you can plan, every captain and boat is different.
Pretty confident I saw others with coolers leaving on the fishing boat but I didn’t go.
