Unopened, vacuum sealed packages of country ham are shelf stable and don't have to be refrigerated. But in order to extend the freshness and quality it is recommended that they be refrigerated or frozen as soon as possible. Certainly avoid leaving them exposed to warm temperatures and enjoy it by the stamped date on the package.
We we traveling and it was cold enough so we didn't have to refrigerate the ham till we arrived home.
