Better than average. You can't do much better unless every one is required to wear germicical suit before entering.
Not sure about the sanitation parts, but they do have baskets that you put a piece of wax paper on for the buns, and everyone takes a pair of tongs to pick up their buns. The staff will use your tongs (with gloves on) to put the buns into individual paper bags. I don't know if they clean the handles of the doors when you open the display cases or how they clean the handles of the baskets, but I just hand sanitize after I leave
