Besides just you socializing, make sure any other dogs you have get a chance to also, to make sure it's a good match for everyone
I adopted a hamster from the SPCA and yes I was allowed to hold her and play with her. I've adopted dogs at other shelters and they always allowed me to socialize with the animals.
