If my flight arrives in Tijuana, how many days do I have to cross through the CBX? For example if I first spend a few days in Ensenada and then I want to go to San Diego.

You have two hours starting when your plane arrives at the airport, but you can not leave the luggage area. If you leave, you can not use the bridge anymore.

You have to spend the same day you arrive and preferably not having left the airport for security reasons. If you go to Ensenada you can not use CBX first.
