Yes I think it does matter because I have eaten at Japanese restaurants that were owned AND run by Korean or Chinese people and the food sometimes reflects this.The flavor palate and spices used and dishes on the menu are SOMETIMES different than traditional Japanese food. My Mom was Japanese and a great cook. Childhood memories are among the reasons I eat Japanese comfort food. I don't like a lot of garlic or hot peppers in my Japanese food.
