Our main roast days for café is Monday and Thursday, with bags put on the shelf Tuesday and Friday or within 24 hours. We prefer brewing and drinking our coffee 3 days after roast to allow for some CO2 to dissipate and allow for the flavors to open up. If you need it fresher for traveling purposes or on a different day, you can always order online.
The staff is very knowledgeable and one of the founders is usually on site. I would just ask them for same day roasted beans.
The beans are fresh but not necessarily literally the same day.
