Im going with my two daughters ages 5 and 6 are there any restrictions on rides that state both children require an adult to ride or can just is 3 get on

Height requirements are very minimal except for big 2 roller coasters. They will let almost every child ride with accompany an adult. Much less restrictive than six flags or Busch gardens

The majority of rides are available for 48" or under. Only a few larger ones (the hulk) are 54"+

There are height restrictions on some rides

There are heighth restrictions on many, if not all the rides. If they meet the height restrictions, they can ride by themselves. Enjoy your trip!
