Actually they are open all year round and I just got back from a trip that was perfect. No lines and heated pools, great time to go.

Volcano bay was open when I went last week
Was just there missed a day due to the weather. If it under 65 they won't open n say its to cold. Lol. Was open the next day so we were happy of course its almost december too. Lol. They are used to 80 and 90 so I can understand.
Depends on daily weather condition. It was too cold this Sunday, Nov 28th, so the park was closed.
The water is heated! We were closed last year for repairs but will be opened unless the temperature is below 65 all day
