Depends entirely on which combination you choose, as they have both cooked and raw meats. Most people, in general, don't like the raw meat option, therefore often overlook at the fact that the raw meat is sliced really thin and then added to the hot broth, in which then the raw meat is slowly cooked, giving the previously raw meat a more tender and velvety soft, cooked texture... Clearly an underrated delicacy, in my opinion...
You can request it to be on the side if you want it raw. I prefer it raw. I marinate the meat in soy sauce and hoisin.. Then put it in the hot broth and it will cook it.
