Thank you for your question! All of our meat is hormone free, antibiotic free. Our pork belly is cured at our store for two weeks. We do not use nitrates in our curing process. After two weeks, we then smoke and cook it on-site. Our bacon is used throughout our kitchen, from our burritos, quiches, BLT to our burgers. Please let me know if you have any further questions.
