I have a NY license. I moved to CT, but did not changed it. I waited for it to expire. It did. In June. However, the DMV offices were closed and I got an extension for 180 days. I'm moving to Florida in September. Can I just renew it then, in FL?

Yes you can renew it in Florida but driving around with a expired license isnt safe. You got the extension due to the virus but be careful.
