They have a water park there, so if you plan on doing that you might want more than one day. If not one day is fine. Just go when they first open to get a full day out of it.

Otherwise, the trip is a complete waste of time. Also, unlike Phoenix, make sure you check the weather for the specific day you plan on attending the park. Park can be experienced in one day if not overcrowded. During weekends and holidays, you should expect longer wait times.
If you're going on weekends or holidays make sure you have the express pass or Vip pass. If you're California resident then it has an annual pass which is great and you can go almost 200 day's a year.
It will only take you one day. But you should also get a privet tour pass. So you can get more info on shows, movies and many more then taking the tram ride.
One day is enough, we were able to finish all the rides by afternoon, even on a very busy day since we planned accordingly. Be there when the gates open and go to the Wizarding World first.. That ride and the sorting ceremony place gets way crowded by afternoon. There is something called a crowd calendar, do check it.. Sometimes getting down to the lower level of the park alone can take more than 30 minutes
You can honestly get everything done in one day if you wanted to. There is only so many rides and attractions for Harry Potter. There is one show and a few shops to purchase items. No, a day pass or Annual pass are your choices at the moment.
