Dianne, my male std poodle use to try to bite me and anyone that moved fast. The hint that I got from a trainer was when he bit at my hand instead of pulling away, force your hand into his mouth. It only took about a week an No more nipping. I think there are two things happening, first you aren't playing the way he wants ant then you are forceing your hand deeper into his mouth. Midnight is 6 yrs. old and today he is 2nd level CGC, AKC Beginner Novice Obedience and Therapy Dog. He doesn't bite or nip. Find an AKC Kemnel club and sign up for Obedience class. Don't take just one class, they need attention and practice. That will give him a feeling of security and respect for you. Good luck.
