To add on to Riley's statement, they focus very strongly on seasonal and local ingredients so the menu changes not only because of what the chef wants to offer but also in response to what's available. As an aside, they very recently got a new head chef in so the style has changed a little to reflect his particular flair. I can give first hand testimony that it remains as phenomenal as before.
They don't have a fixed menu as their dishes change constantly. They'll ask you for dietary and flavor restrictions (e.g. you're lactose intolerant or hate bitter foods) and craft the menu based on that. You can find photos of previous dishes online to get an idea of what they serve.
