Because you buy on an anticipated volume serving fresh,....if volume us higher then you run out. Personally, I want fresh so that is good, disappointed to not get what I wanted, but better than frozen or not fresh.
The clams I ate were so fresh they were full of sand
If you open at 11:30 and run out at 1 PM that is no excuse.
