If an elderly person that age or in that range the group will request a backup family member to take ownership of the dog if any thing happens. Generally that might be in the contact agreement.
I am sure if they are able to care for the dog properly there shouldnt be an issue. I know there is a program through some of the rescues/shelters that is called Seniors for Seniors and they pair senior dogs with senior Citizens.
