i was told by a hostess you use lard in your cooking. is that true?

I work as a server in cocina del charro, we use lard to cook the refried beans, that's why they're so delicious, but if you're going to order a fried item, like chimichanga or crispy shell tacos 🌮 we use canola oil on the fryer
