Why does Smittys close so early during week days, even on vacations?

I am comparing to other movie theaters where movies start after 9pm during week.

You will not find anything but some restaurants open after 10pm during the week. Once summer comes, they will be open later.

I believe it's supply and demand. Seeing how even during school vacations people still work days during the week they don't think it'll cover running costs to stay open later with people having to get up early in the morning. Friday's and weekends are their bread and butter.
