Is there a specific trail that's best for a short day hike (thinking around a couple hours)? Or a recommended place on the trail(s) to start that may have more information about the trails? Thanks!

There is a trail map at the entrance. The trails are all loops that loop back to the entrance or other trails, so there is only the one place to start. Most of the rails are very short (0.5-1.5mi), but if you just hike in the biggest loop you can (possumhaw to cedar brake to fossil ridge to escarpment or something like that) it should take you a couple hours

So, yeah, the trails are identified as to the timeframe and the difficulty level. There are many great choices
