can you use rhubarb in the stone tea cake? If so would you add sugar and a thickener or just cut it up

Hi Eva- Yes you could use Rhubarb for our teacake, we are currently using it in ours right now. We do make a compote with our Rhubarb before adding it to the teacake. That involves macerating rhubarb in sugar, simmering until al dente, straining out the fruit, cooking down the syrup a bit further and then mixing the fruit back into the syrup. Enjoy!
