I have a 40-gallon long, fully planted tank with small, community fish. Would it be better to go with one medium sized sponge filter or two small sized sponge filters?

Go two smaller ones. You will have more surface agitation and more surface area for beneficial bacteria to grow. But make sure your air pump can handle two spots filter.

I agree I use 2 small sponge filters for my 20 long plants are doing great.
