They do sell small packs of seeds; you can cut flowers and purchase individually or buy a bucket and fill it. They have ratcheting shears for you to borrow but it would be a good idea to bring your own.
We brought a few flowers home to make bird feeders. The farmers took time to tell us exactly what to do. I am sure they will help.
