As a former over the road trucker that has hauled salmon for thirty years, I can tell you that 99.9 percent of the salmon sold in this country is farm raised in Central and South America and is flown in where it sits at an airport in customs for a minimum of 4 hours unrerigerated in shipping containers. As for Detwilers, If the filets aren't bright orange with no discoloration, I would say fresh. If it is whole salmon, ask to hold one, lift the gills, they should be a bright red with no strong oder.

Did you know farm raised salmon is gray and is dyed orange. Only wild salmon is naturally orange in color.
