Rainbow falls is a ten mile round trip from the gift shop and half that is uphill some fairly steep so if your an elite marathon professional you could probably see the entire park in a day. Truth, these folks saying you can see it in a day are FOS
Personally, I would suggest a day trip. If you are up for it, you can do a weekend stay. If you have kids or not very experienced with camping, I would suggest the day trip
Yes I it is a good day hike and you can camp in a tent nice large rock cliffs this area is part of what is called a n escarpment

You can do both. Day hikes for most any route, def suggest Rainbow Falls and then on way back detour up to Jones Gap falls and can be done in half a day easily. And would definitely suggest driving up to Caesars Head lookout to end the day. Its beautiful as the sun goes down and the viewing area is right where you park.
Jones Gap is a very big park with lots of trails that even connect it through the Mountain Bridge Wilderness Area to Caesars Head SP, which is also a must see. It takes about an hour to get out to the park from Greenville, so it is quite remote and obviously you can enjoy the park most during daylight hours so the location can be limiting. Personally, I enjoy the Rainbow Falls or Jones Gap Falls trail as stand-alone day hikes, and it is totally worth the visit just for those, but the park has a lot to offer and could definitely be more fully enjoyed over a weekend camping trip.
Day trip. Some great trails, but you can knock them out in a day if youre a strong hiker.
