There is a really good build your own salad bar at Harmony Hall. Wings has a selection of fresh and pre-packaged gluten-free options. There used to be a Mexican place that had several options, across from Starbucks. It was closed when we were there on Friday and the map says Carowinds Cafe so they may be switching its menu.

There's gluten free food here and there, it's not at every place you can eat. I'm not sure on the cost
There is 2 or 3 dining facilities that offer gluten free products. I am not sure about cost on the products
I'm not sure what I was gluten-free but I do know they have a couple things that are but they're pretty expensive food-wise so what we typically do is pack a cooler with like sandwich stuff and we just go back out to the car and eat lunch and then go back into the park after we're done eating. they usually just stamp your hand if you're going to come back into the park so that you don't have to show your pass again or your ticket.
Not sure about the food. We ate dinner before we went to see Christmas lights.
