Is there a hike into a gorge and waterfall? I sort of remember that but not sure if it was Zion.

You are probably thinking about the narrows. You hike in about a mile and a half and then you start walking up the river. There are waterfalls to see on the hike. This time of year there a re a lot of people, but the views are still amazing.

Sorta sounds like the hike/trail to Lower Emerald; possibly even Upper Emerald Pools. Not nearly enough water flowing at this time of year (June/July) to make for big waterfalls, but springtime is much better.

Could be the Emerald Pools too. Sheer walls all around with a small waterfall. Couple of others on the hike in too.
