The shuttle ride alone is amazing. Emerald pool hike was very easy but i think its closed due to rockslide. You can see plenty from the road. If you have a handicap, you might be able to get a pass to drive your own car up the canyon, check at the visitors center
There are no lakes in the canyon. There's a muddy river. It's very hot this time of year. I agree the shuttle ride encompasses amazing scenery and you can hop off and back on at numerous stops. I wouldn't call Emerald Pool a very easy hike as there are some fairly steep runs, especially if you are out of shape (like me) or have a disability.
They'll announce what you can see on the shuttle, if you want to hike. I personally haven't hiked. The drive through is lovely, if it says to park in town. You'll be able to still get in. I was just there. Then u can see if u can find a space when you drive back, if u decide to turn around. Drive beyond the 2 tunnels though, if you decide to turn around.
It's pretty just from the drive through east-west, with several pull-out stops, but not sure you can see the river. Maybe by marked stops #2 (museum) and #1 (visitor center). The shuttles are the only ones to go to north to the other trailhead stops. Riverwalk (last stop all the way north, #9) is paved and good for ppl with mobility disabilities.
Ask Park Rangers they have maps an can tell you yes you can on some trails they will help you an the shuttle is very helpful.
The river walk is only a mile right next to the river the entire time. Very easy hike and beautiful, but very crowded so get there early!!
