All of the responses are great but the last one is the best because you will get the most up to date info on current conditions. If you have never hiked on rock I would suggest a short first day hike. Zion has something for everyone!
Definitely Angel's landing. It's an intermediate hike with an extremely rewarding view!
Angel's Landing. Go early in the morning.
We just did the West Rim Trail and camped overnight in campsite #6. The entire trail from The Grotto out to site #6 is stunning. Even if you can't get a campsite in West Rim Trail, I would Highly recommend this route. It's about 8 miles one way.

Observation Point is an awesome view down the canyon. Currently, the East Rim trail to Observation Point is closed due to rock slides. If you still want that incredible view, look up the East Mesa Trail. The beginning of the hike is nothing remarkable, but the payoff is worth it
I would say the 2 best hikes are Angel's Landing and the Narrows. The Narrows is a water hike and can only be done if the river is calm enough day of and if it is going to rain or not. Angel's landing is a difficult hike. But totally worth the view and the thrill
