They are flushable porta potties and checked through out the day. They are kept clean.

In addition to the answer from Susan, there is also a sink and handsoap. The restrooms are convenient, one set at the upper end of the village, and another at the opposite end, near the jouting arena.
There is also running water and sinks to wash your hands after using the flushable porta potty. A tip? Look near the handle of the porta potty and if it's green it is available. Red is in use.
There are 2 more locations. Past the pub and and back towards Canterbury kitchen. When you enter the fair you can get a program, locations are in the map in the center of said program.
