2 full days will give you enough time unless you have small kids. Doing the tours is inexpensive but you must have a reservation cuz those sell out. Reservations available at the park visitor center and the Cortez visitor center. The park visitor center opens at 8 am so reserving the day before is a good idea unless you want the afternoon time slot. The first time to Mesa Verde we spent two full days. This year we saw our favorite spots in one full day.
We felt like 2 days was a perfect amount of time as there are 2 separate sections of the park that are pretty spread out. It's 2 full days though and you'll need to plan your days well with an early start. We did all three tours (be sure to get your tickets 2 day in advance in person) as well as Step House, all the stops and the Museum. You can also take bikes on the paved 6 mile loop on the Long House side of the park, which allows you to see much more in less time. We had an 8 and 10 year old with us, so perhaps the time allowance varies from that of an all adult trip, but I'm pretty we saw just about everything in a thorough manner.
It can be done in two full days, but it is a lot fit in.
It depends entirely on how much you really enjoy it. We stayes for 2 nights and were pretty glad we didnt book another day. We toured cliff palace and did the self tour at step house. At that point, we felt that we has seen enough cliff dwellings as they are all kinda the same. The point lookout trail, near the campground, was the highlight of the park for me.
If I get a chance to go again it would be 3-4 days.
