If there isn't a return address, they'll probably be lost in Oblivion. It's technically illegal to open someone's mail. I'd call that particular office and ask how they handle stuff like that. Or, cancel the checks and write and send out new ones.

If you simply don't come in to collect the letter, it will be returned to the sender after approximately 15 days. However, you might get a second notice in your mailbox. If you would like to let the post office know that the person no longer lives at that address. You can come in any time to inform them and it will be returned to the sender sooner.

The last pickup is the lobby drop box inside the post office, and it is at 6:00 PM Monday-Friday with a 4:00 pickup time on Saturdays

They have to rekey the box so you shouldn't receive a charge. They will not forward things left in the box with a forward request filled out and on file.

They do not deliver mail on Sundays, but they do deliver some packages.

Happens all the time. Layton PO sucks. Not really much you can do besides take it there and complain
P.O. boxes get their mail by 9 AM. I'm assuming the carriers leave by around 8 AM to deliver mail.
