Best to call, they do a lot of in house processing. I've never asked for organs, but what I have asked for that they didn't have, they placed an order for me.

Lynne I know they carry lamb but I'm not sure if they have shank currently. You may want to call them ahead of time. They do have an amazing tzatziki sauce though.

They do have some offal in their freezer reach-ins. I can't remember exactly what is/was available, but I recall looking at bags of cut down femur bones for a stock one time and seeing "other" parts wrapped and labled. As the previous gentleman said, give them a call. They are fantastic neighbors and would love to help you I'm sure.

In the freezer cases they sell "exotic" meats like ground bison, deer, elk, etc. You should be able to find bison there. If not, ask a counter clerk if they have any in the back. Good luck!
