A must stop if you are near red rocks. The food was absolutely delicious. We ended up ordering more to take home! My boyfriend loved the Idaho. We tried the Michigan, Castroville, New York, Idaho, Sacramento and Texas. My one notes would be that I wished the veggies in the Castroville were chopped. I absolutely recommend this place!

We stopped in for lunch after hiking Mt Falcon area. What a great selection of Mac n cheese. We got pulled pork bbq sandwiches which were yummy too. I would stop here again.

This was cheese-licious!!! We had the East Carolina and Rhode Island. What a neat concept for food! Each dish is made to order and piping hot when served. The customer service is excellent. There was some live music that was very enjoyable and not overpowering. Great location, good eats, excellent service, cool tunes. Love it!!

Taking some scenic roads, from Red Rocks Amphitheatre, South. We ran across Mac Nation. It is deliciously awesome. Their colorful billboard out front has their whole menu, which includes about 50 different combinations of mac and cheese, each name for a different city in the United States. I had the Louisiana mac and cheese, which Incorporated Cajun shrimp, andouille sausage, and peppers. My brother had the Tampa Bay. It looks like the mac and cheese is mixed with the various ingredients, put in a 6 or 7-in foil tin and baked in the oven to crisp it. Very delicious. The atmosphere, as you can see by my pictures, is almost a hole in the wall type style. With a lot of color. I sat outside on a beating up metal chair with a similar style metal table that was not on steady ground. The waitress, and perhaps owner, is very friendly and helpful. They also have a variety of beers, which includes some regulars, and some crafts, and wines, and Waters, and soda. I only reservation would have to be that I thought it was a bit pricey. With tip, for my brother and I, it was about $40-$50. Nonetheless, if you happen to be on parmalee ridge road, about a quarter mile north of 285, you might want to stop in and give it a try.

Outdoor dining or take-out only. They do have a heated tent but it is on a heavy slope.
