On the table it's cane, in soft drinks it's hydrogenated high fructose corn syrup. In the kitchen it a derivative of beet sugar. More importantly, who really cares! Boring!!!

I'm a local chef. I can say from experience most places use beet sugar since it is cheaper. But I cannot say for sure. I would call and ask if there's any concerns over allergies or other problems I'm sure the staff would be more than helpful.
