Hello!! Does anyone know if I can take a van from JFK to the hostel without a previous reservation? Like, can I go to a Van and simply ask them if they can take me?

Yes, at the exit of the airport there is Shuttle Bus Office.

You don't need to book. From the same terminal there are the stands to take the transport without the need for prior reservation.
