I was getting my cabinets ready for staining but i like the look of them after sanding,…what do i apply onto them now to seal them? I do not want a glossy look, more of a matte look. Please and thank you.

Clear oil sealer should do nicely.

You can use a varnish,you can do a hand rubbed oil finish. It also depends on how durable a finish you want and how often you want to redo the finish.
