Yes and they are very good
I have never seen something specifically advertised as gluten free on the menu, but most sushi components are gluten free. The primary exceptions are surimi crab, tempura, and certain sauces, like soy. I will say the staff at Sapporo is very helpful when it comes to requests and modifications!
They do have a very extensive veggie section. I did not see exclusive gluten-free options but they do custom rolls for you if you like.
