They have gluten free soy sauce and you can modify the rolls to meet your dietary needs but its made in a gluten filled environment.
Sashimi would be the best way to go!
I do have Celiac. But many restaurants have gluten-free menus, but do sometimes screw up, like the GF soup at Olive Garden.
