It depends on how much u like the cold because depending on the time in may it may still be a bit chilly. But besides that it shouldn't be too busy but making a reservation would be best anyway.
May is a great time to go whitewater rafting. Historically, the water levels are at their highest in the spring. It does however depend on rainfall. Early May can be a bit cool so you will need to be prepared for that.
