I go here at least once a month and I will say this; you won't get as large a variety of things to choose from during slower times. They do about 70% of the meats, and the same for the hot items at the salad bar. You will also probably wait longer for the things you want to come around to your table since there are far fewer servers, and fewer items cooking at a given time.
